We received so many green goodies from our CSA, it was glorious! We visited family in Pennsylvania and brought most of it with us to share since we couldn’t have possibly eaten it all ourselves. Our first endeavor with the lovely produce we received was an omelet. A wonderful, healthy way to get your morning greens and start the day! Here is the recipe for broccoli rabe omelets (makes 3 servings):
3 egg whites
1 bunch of broccoli rabe
1/2 green pepper
1/4 Spanish onion
Shredded cheese (optional)
Salt & pepper
Start by dicing up the pepper and onion. Heat a round, 8-inch pan (or an omelet pan would be great) and coat it with a little olive oil. Toss around the onion and pepper and cook until soft and the onion is translucent. Set the onion and pepper aside in a bowl.
In a bowl, whisk together the eggs and set aside.
In the same pan that the pepper and onion were heated in, add the broccoli rabe and lightly wilt for about a minute. Set aside with the pepper and onion. Mix the contents together and separate into thirds within the bowl.
Add the first third of broccoli rabe/onion/pepper mixture back to the pan, spreading equally around the pan. Pour the whisked eggs over to lightly cover the greens. On medium low heat, allow the egg to cook nearly through. Using a spatula, or if you’re gifted, flip the omelet over to cook the liquid part of the opposite side. If you desire, add cheese to this cooked part and allow to melt. Using a spatula, flip half the omelet over into a crescent shape and serve. For the other two servings, repeat this paragraph. If necessary, keep the omelets in a warmer or slightly warmed oven until all three are ready to serve together.
Top off with salt and fresh cracked pepper, if you desire. Serve with toast and/or fruit. Makes a lovely, healthy morning brunch. Enjoy!
