Pear Salad

This wonderful salad was not my creation, but my husband’s.  I give him full credit and tried to get him to write a guest post but he declined.   I had to share it though.  It’s practically restaurant quality and I’m so proud! 🙂

Even better than a beautiful salad: coming home to dinner after a long, busy work day and a sweaty, awesome evening yoga class.  A good meal made with love is the perfect ending to any day, in my book.

On the flip-side, as a warning, it is not pleasant to come home to the apartment permeated with the smell of balsamic reduction. (Woof!)  So, if you’re like Phil and decide to go gung-ho with balsamic reduction, you have fair warning.  Once you get passed the smell, the benefits of eating this delicious salad far surpass the pungent aroma anyway.  So really, who cares?  It’s delicious and that’s all that matters.

Ingredients (organic, if possible):

  • baby spinach
  • 1 pear, sliced thin
  • walnuts
  • gorgonzola crumbles
  • balsamic vinegar and oil (or a balsamic reduction which requires balsamic vinegar and honey heated until slightly thickened)
  • Salt & pepper
